Roasting at origin

The specialty coffee company that never left origin

We grow, process, roast and ship award-winning Honduran specialty coffee entirely from Honduras, keeping 92% of revenue in the country where the coffee is born.

Why roast at source

More of the value stays where the coffee grows

Instead of exporting green beans, we build value at origin, so more stays with producers and their communities.

What roasting at source means

Fresher, fairer, traceable

  • Quality and freshness. Coffee roasted near the farm brings fresher flavor and a deeper expression of where it was grown.
  • Transparency and control. Close oversight from harvest through roast to shipment.
  • Real impact. From roasting to logistics, skilled jobs and long-term stability in Honduras.
  • Connection through experience. Through cuppings and our Coffee Omakase, guests taste Honduran coffee at its source.

Our founder

Kathya Irias

Kathya was born and raised in Danlí, El Paraíso, a coffee- and tobacco-growing region of Honduras, and grew up planting and harvesting alongside her parents. Twenty years later she founded the company to support small-scale producers, the people who have spent generations nurturing coffee at its purest.

Her purpose is to bring exceptional specialty coffee to the world while honouring the people and the place behind it, from Honduran soil to your cup.

Founded in 2020 as Spirit Animal Coffee, featured in Forbes and Country Living and B Corp certified, the company became Spirit Origin in 2026: same farms, same award-winning coffee, and a name that says what makes it different.
